Well, I cheated and bought 2 jars, already prepared kimchi, at the Mustard Seed Market this morning. This market is about 40 minutes from us but they had a great deal going on with the Hemp milk that I like. It was buy 1, get 1 free. I bought 12 - 32oz. cartons. What's nice about this milk is it has a long shelf life. Good until December of this year..
There are alot of kimchi recipes that aren't as complex as the one in the post.. And by making your own, you can adjust the korean chili powder to your taste. Some like it hot, some not.. Some put different fruits in it and add white radishes, cucumbers, etc..... The main ingredient is the cabbage.....

Barb! Thanks for the well wishes. Jack & I go up to Cleveland on Monday afternoon.. Carol and Harry go today for his pre-op..
