I just saw the sub milk recipes- they all look great!
For the rice milks do you have to use the nuts? I am not sure if I am ready for the nuts just yet.
Do you add any sugar or anything to make it sweet or is it palitable the way your have it...

You may find that the more ground up the nuts are, the better you can tolerate them. You can add honey if you like them sweeter. Also, extra GF vanilla adds a nice touch. Let us know what you think!

I have tried to make the rice milk two times and both times they came out rather chalky- I used fresh cooked calrose white rice, cashews, warm water, powdered vanilla- and followed the directions as far as I know.

Actually, I haven't had much experience making these milks either, and I have had the "chalky" problem. I think the recipes came originally from Dee, who is a wonderful cook. Let's defer the question to her and see if she can help us. Dee? (I know she is busy taking her hubby to the doc, but maybe when she has a minute, she can help us).

Hey Polly- Those Terps are looking good- really pulling through at the end of the season beating Duke and UNC! They are an almost lock for the NCAA tourney- lets hope they do well!!!!!!!!! I will be watching as many of the games as possible!

Hi There!
Your rice milk will not come out clear. Make sure that when you strain it you leave the rice residue in the bottom of you pan. You can use about 3-5 chopped dates also to help sweeten your rice or nut milks. I have made both the almond and rice and they both came out fine. Try a rice like jasmine, which has a nice nutty flavor. Is the rice that you are using a white rice?? Not enriched?? If so, this is my standard for making rice, let's say for stri fry.. Take 1 & 1/2 cups of water, add a little GFDF butter and a pinch of salt. Bring that to a boil. Add 1 cup of your rice, stir, then turn off the heat, put a lid on the pan. Let it go for 20 minutes.. Your rice wll come out perfect, nice and fluffy.

I used to drink Rice Dream also, but it seemed to make me sick, so I quit using it. About a year later, I found out about the tiny amount of barley protein that it contains, (less than 0.002%). When I was using it, (at least 5 or 6 years ago, maybe longer), the label didn't contain any mention of barley, the way it does now. A year later, I noticed that it was on the label.
I used Rice Dream for somewhere around 6 months, right after I adopted the GF diet. Now I wonder if that might be the reason why it took me almost a year and a half to get to the point where my symptoms were under control.
Rice dream contains high oleic safflower oil, and sea salt. Maybe a little experimentation with adding those ingredients will make your home-made version taste more like the store-bought stuff. Of course, without malting the rice first, it will never taste exactly like Rice Dream, but at least cutting out the malting process eliminates all the gluten.

The first time when I made it with Sushi Rice it came out just very bland- so this time I added some sugar and used cashews... I pureed them for about 8 minutes or so and let it sit for at least 2 hours, so I thought it would come out better.
I need more practice but maybe some more suggestions like Tex's and I will try them this weekend.

I guess that I have to question what you want to use the homemade rice of almond milk for???? Drinking, baking, for white sauces??????????
I can't say enough about the Living Harvest Hemp Milk. I stumbled across it while researching non-dairy milk substitutes.
When I use to be able to have dairy, I made a killer homemade potato soup... I use to sell it by the gallons to families in a restaurant that I worked for.
Sooo, I have had this craving for my potato soup and I put the hemp milk to the test for dinner tonight. Put my nice sized chunked potatoes, chopped onion, celery and carrots in just enough water to cover them. Added salt and pepper. Cooked them for about 15 minutes while I made a white sauce using 4 tablsp. DF butter, 2-1/2 tablsp. of the sweet white rice, and heated those and stirred until smooth. Added 1-1/2 cups of the hemp milk to that mixture.. When vegetables were ready, I just added the sauce mixture into the cooked veggies and WHALLAH!!!!!, I had potato soup.. Hubby said he wouldn't have been able to tell the difference from what I use to make.
So, let me know what you will be using the other 2 milks for and maybe I can give suggestions.

Do any stores carry the hemp milk or can you get it only online? It looks like I may be able to tolerate it - no carrageenan like most nut milks have.
Did you use the original one for your potato soup? What does the milk taste like by itself? Or is it best used for sauces/soups?

I prefer the original flavor because it tastes like real milk. I use it in mashed potatoes now instead of chicken broth and anything that calls for milk. They also have the vanilla & chocolate flavors. If you'd like a glass of milk this product is the one. No after taste like the nut milks.
Since it seems to be a new product I am just seeing it at Wild Oats or Whole Foods and we have a store about 30 minutes from us that I had called and they were waiting for their order to arrive. That's the store that was running the buy 1 get 1 free deal when they got it in and on their shelves.
I suggest calling around to some of your health food stores to see if they
carry it or plan on getting it in there store.
