Hi Matthew. I have been thinking about your layered vegatble dish you described making for Thanksgiving. I didn't re-read what you did until just now, but tried something similar Wednesday night.
Now ignor the fact I shaved off a nice piece of my finger using my mandoline, but I just layered apples and potatos. I sprinkled some cinnamon on top. But it didn't work out too well. It was like a dish of apples and potatos. Separate, not blended flavor at all. Plus it dried out on the top.
Did you add moisture? Cover it while it baked? Add anything for blending the flavors? I seems like a neat idea and relatively easy to make. (and next time I'll be sure to switch to using the guard to push the potatos over the slicer).

Not sure what Matthew's recipe was but I think a layer of cabbage in the middle would really be a treat. Howeverm I would parboil the cabbage first and add some caraway seed.
