Just a little update...
Hi all...haven't written much lately (though reading faithfully every day!). I've been too busy cooking! Tex, can't thank you enough for the Pamela's suggestion. We love her bread, cake mix and baking mix. I've made corn muffins, waffles, pancakes, cake, bread, french bread, pizza--who would have ever known that we were a gluten free family! Have also tried a number of other recipes that my friend gave me--if anyone is interested, just let me know, I have a bunch.
So, both sets of parents are coming in today for a week. We of course got 4" of snow last night with another 5-10" expected today. It's beautiful, but did it have to come on the day when I am making 2 trips to the airport?? I'm a little nervous about having them all here---it's our first company since being gluten free. I'm a bit of a control freak anyway (ok, my hubby would probably say a big control freak), and I'm trying not to worry about cross contamination. I don't have a lot of things left over from the old days, but I didn't throw anything out, either, since I didn't know where we'd be in a month's time....I'm sure it will all be fine, right?
A little update on the kids--they are still doing great on the gluten free. My middle son came home from a friend's house last weekend and told me that he had just had some D. He started to cry and said, "It's because I had a piece of bread last night!" He was very upset, bless his little heart. I explained to him that we don't know that it was the bread, but thanks for telling me. It will be interesting to see what happens when we do a gluten challenge in a couple of weeks. The other two have had their symptoms pretty much disappear.
As for me, I feel great--my energy level is phenomenal, most of my symptoms have cleared up--it's amazing. Norman still isn't behaving, but it sounds like it will take a while for that to happen. Mostly I can't believe it's taken me this long to figure it all out!
Ok, I have 3 bathrooms still to clean this morning--better go get them done!

Sounds like the whole family is making progress. How is your hubby coping? Does he feel like he has a gluten problem too? Or is he just very supportive? I hope he is at least the latter. My fiance is very supportive and tries so hard. So I know how much a supportive partner means.
Your kids sound like they understand the benefit too. That's great! My step kids don't get it, but they are young and don't have to worry about it. They kind of pick on me about it. The older tries to tell me what I can and can't eat, but doesn't understand fully what is in different foods yet. Although she loves to cook so is learning.

It's great to see that you are feeling so well. I think it's kind of amazing that every one of your kids are all responding so well to the GF diet. That's awesome, in view of the statistical odds, (unless the experts are wrong about the odds).
It sounds as though your son has already become very attuned to what he eats. It's kind of surprising that he made that connection so quickly. Obviously he's a fast learner, and you've taught him well.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

My husband is great--he is supportive of everything I need/want to do, especially if it's going to help me feel better. I've been feeling so poorly for so long that I think at this point he'll do anything to help! To give him fair credit, though, he is a very kind, gentle, supportive man, so it's just his personality to want to help. He is happy to eat gluten free at home with us, especially since we all seem to be responding to it. I have no expectations that he'll eat gluten free when he's out--whatever is going to make him happy is fine with me.

I guess it's proof that either a) the blood work can be wrong, or b) there is a definite group of people who are non-celiac gluten intolerant. I know that there is still a lot of controversy over the last one. As for Will, he is an extremely bright young man (in my non-biased opinion, of course) who is very aware of everything, very much a rule follower, and soaks up information like a sponge. The combination of those things has made this little experiment very easy for me! My little one is my dairy policeman--he is watching me like a hawk making sure I don't eat something I shouldn't!

I'm really happy you are doing so well with the GF diet. Sounds like you are making every effort so that your family doesn't feel deprived, and I'm glad you have found GF products that you like.
It is especially wonderful that your children have responded so well to the diet. Just think of all the grief you have saved them by finding out what helps while they are still young. I think that is fantastic.
