Hello, all...haven't been on this site for a very long time because things have been going pretty good. But then.....after being GF for 4.5 yrs because I thought I had Celiac, I was dx's with LC. Also, told to eat gluten, by my gastro. Tried it....nothing but heartburn, so gave up gluten. Now, lately I have gone back to gluten, regularly use soymilk, and use dairy once in a while. To sum up, things are going bad. Amazing how discouraging it can be after being o.k. for a long time. Doc said this disease had its ups and downs. I am having problems with Arthritis, various aches and pains, gut rumblings and D. I lived with the aches and pains, but now the heartburn is every day. Can't eat one M&M without heartburn. I thought my Bp med (Lisinopril/HCTZ) might be causing this because I have been more compliant about taking it lately. Guess I was in remission, but now it's back....thought I could get along and eat like a "normal person". Read about you folks who are GF, CF, soy free, sugar free, processed food free, DF, etc. Guess I am willing to try anything about now. Can't believe this thing is back! But what do you eat? With so many foods eliminated, what's left. Recently I was trying to eliminate meat because my cholesterol was too high. I know dairy, eggs, bananas, raw foods bother me and of course, probably gluten, as well. I have been tired for weeks and depressed. Docs have not been much help in the past. Suggestions? Sylvia

Welcome back to the board. I'm sorry that you find yourself back in the syndrome of having reactions. I'm short on time right now, (have to get back to work), but I'll make a few quick suggestions.
First, your description of your symptoms sounds like a classic case of gluten sensitivity. It is a fact that once you are gluten sensitive, you are always gluten sensitive. You may go into spontaneous remission for a while, but that does not mean that you can eat gluten without damaging your body. Your GI doc obviously doesn't know the first thing about food intolerances. You need to get away from him, and find a GI doc who understands gluten sensitivity at all levels, not just full-blown celiac disease.
Meat is not causing your cholesterol problem. Research has proven conclusively that eating meat, (even fatty meat) does not cause elevated cholesterol. I don't have time to look up any references on that right now, but if you want me to look them up and post them later, when I have more time, please let me know.
The safest diet you can follow is the paleo diet. For starters, search through some of the topics about it in the forum on this board called "Discussions on Treatment Options Using Diet, and/or Medications". Also, you can find a lot of good reference information in the "Information on Diet" forum.

Diet help needed!
Hi Tex, yes I do have concerns about meat and cholesterol. My total number is 240 but my HDL is very high, LDL not so great and triglycerides not too great. Still, the ratio is good....and I have tried Lipitor with muscle pain so couldn't take it. I scanned over some literature on Paleo, and had hamburger and carrots for supper. Everything has been giving me heartburn lately, and I have been taking Axid (an acid reducer like Pepsid) for it, but when it starts up, even water refluxes. I have really been sloppy about diet.....lots of chocolate since Valentines Day (after holiday sales). Anyhooo what do Paleo dieters eat for breakfast. I just ordered a big shipment of gluten-free Mesa Sunrise cereal. Thinking of eating it dry, without the soy milk. Soyburger made me sick, but soy milk well, I dunno. I suppose rice is out? Even my favorite food potatoes are out.....Would like to see some lit on meat/cholesterol and thank you in advance for your interest. Sylvia

I`m sorry I can`t help you with anything about diet because I am one of the lucky ones who has a problem only with NSAIDS and occasionally beef.
I do, however, have a lot of problems with heartburn and reflux and have tried everything. My doctor finally prescribed Protonix and it works a full 24 hours. I usually take it at night and don`t have one bit of trouble until close to time to take it again. I have never had to buy it because my doctor almost always has samples and even if I don`t have a scheduled appointment I can call the office and I only remember once they didn`t have it and had to wait 2 days. It is apparenetly one of those meds that the company samples a lot of.

This disease is the pits, isn't it? Don't beat yourself up over the diet indiscretions - it is so easy to feel deprived and fall off the wagon. And you even had a jerk doc tell you it's OK to eat gluten!
I agree with Wayne. It's much easier to just jump to the paleo diet than to try to read all those labels, learn to substitute non-gluten grains, etc. You can always add in other foods if you want once you have put the LC in remission.
I would suggest getting a copy of Cordain's book, "The Paleo Diet". It is so well researched - over 400 references to peer-reviewed articles in scientific journals. You can probably get one cheap at amazon.com.
I have totally controlled my LC with diet for over 5 years now - with the last year being paleo. Have never felt better or had more energy. And my lipid profile is perfect. I think the research is beginning to show that it's the "bad" CARBS (bread/pasta/flour/sweets) and NOT the fats that is causing the epidemic of obesity, diabetes, and yes, even heart disease in this country.
The easiest paleo breakfast are leftovers from the night before! Or, you can make a fruit smoothie using a half of a banana and berries with a little apple juice added or eat a bowl of fruit with some raisins/nuts added. Eggs are allowed if you can tolerate them. Most paleo meals are an equal amount of meat/fowl/seafood and veggies/fruits. Sweet potatoes make a good breakfast - you can mix up with a little maple syrup, nuts, and cinnamon if you wish. A stir fry is easy to make up for breakfast - just meat or fowl, garlic, onions, and veggies sauteed in a little olive or canola oil.
I'll bet anything that you will see results on the paleo diet. It may take a while for full results, but I'll bet you'll find some improvement fairly quickly. The paleo diet is the best one, I believe, to keep your lipid profile normal. BTW, a high HDL is GREAT! And you are correct, it is the ratios that matter - not the actual values.

I'm not great on giving diet ideas, I just lurk around and try to figure out things for myself. We are all so different with MC and the other autoimmune diseases that often accompany it. This group of folks here are wonderful, but so varied and that's important to keep in mind. I think the bottom step on the ladder is a gluten sensitivity.
Paleo works for me because it is safe, big time. If you decide to explore this way of eating to control your symptoms seriously and are able to make some major eating and lifestyle changes I believe it might help you.
Muscle and joint pain was such a problem for me a fews years ago that I could not get up from the floor without hanging onto a piece of furniture.
My DX of CC was a good thing.. I feel better than ever since I started eating right. Don't be afraid of meat- I'm a carnivore.

what if you cant tollerate veggies very well? I can only eat very well cooked grean beans, peas, and sometimes winter squash. But if I eat veggies too many days in a row I get a tummy ache. I also dont do very well with nuts yet either or fruits besides applesauce. I can eat eggs tho. Can you have rice and potato on the paleo? I guess i will read the link
Dr Fine test shows positive for gluten and casien but negative for soy, eggs, and yeast
