About the pesto in the recipe room...

Post by Lucy »

Sally,

Just wanted to ask you if you thought the pesto would still be good without the parmesian (dairy) if one is also dairy casein free?

I thought it SOUNDED good with the other ingredients, but just thought I'd ask the expert.

Oh, and if you think it would be a good recipe, would ya mind making a note of that over where your original recipe is? Think I'm gunna like this one!

Thanks. Yours, Luce

Luce,

I have the same question - glad you asked it.

Polly

No. The Parmesan is the thing (besides the basil) that really makes this sauce. I can't think at the moment of how to make a similar tasting or even good tasting sauce without it. The reason I included it was because some people can eat aged cheeses. I am sorry. I will think on this.

That must be why all the bottled ones at the store have parmesian in the ingredients, but I have heard that there are a few free of the cheese.

Thanks Sally. I can hear the wheels turning from here.

Yours, Luce
