How about a dairy free whipped topping????

How about a dairy free whipped topping????

1 c of raw cashews
1 c of water
1-1/2 c sunflower oil
4 tbsp of maple syrup
1/2 tsp vanilla
Pinch of salt
Put cashews and water in a blender
Blend until it is a thick cream
Slowly add the oil until the cream thickens
Blend in the maple sryup, vanilla & salt
Pour into a container with a lid
This will thicken more as it chills in the refrigerator

Hi Dee,

I made this exactly as specified. It was a great topper for my strawberries. It would also be great drizzled over a cake. The recipe makes a lot so I froze about 3/4 of what I made.

Can you use any other nuts? I can't eat cashews, unfortunately!

I'm guessing that you can't. Cashews have a unique ability to become creamy.
