Hello Carol & Polly

My health has not been too good lately. After I had that funny turn a few weeks ago & finished up on the floor I have still had problems with the sprained ankles & left leg. My legs & feet hurt when I sit for any length of time, probably more than walking around. I put them on a pillow when I am in bed & that seems to help a bit. Doctor says it could take 3 months or more to get better. I am to see an orthopedic surgeon in a couple of weeks. My GP wants me to have an RMI scan.

I have not spent much time looking at the board. Can't seem to sit for any length of time. Have had other problems with the waterworks as well so am not a particularly happy camper at the moment. Been feeling a bit down about it all.

Looking forward to the weekend & my nephew's wedding. He is the one who had the motorbike accident about 6/8 months ago. He has had a long hard road to recovery so it will be nice to see then happy. Have just finished icing the cake. It has been a bit of a rush job as apparently they forgot all about it & I presumed the bride’s family had it all under control. My sister called me about 3 weeks ago & asked me to do it.

We have had a bit of rain but need much much more. Still on level 5 restrictions & expecting to go on level 6 in the spring if we don't get the rain that we need. They are forecasting a bit so I hope they are right.

We are still waiting for our new water tank to be delivered. They told us it would be 6/8 weeks but is now nearly 10 weeks since we ordered it. If we had had it when we got that bit of rain last week it would have been full by now. Oh well, can't do much more than wait.

I will try to pop in a bit more frequently. Just can't seem to settle to anything much at the moment.

Here is a pic of Dale & Jenny's wedding cake. Did not have much time to do it all in so I cheated a bit. I still had the sugar flower spray that I had made for the VIEW club birthday & they were happy to have that as decoration.

Sorry you're still in kinda bum shape. Glad you have the wedding to look forward to. Boy, is that cake gorgeous! Too beautiful to eat. You are definitely a talented person.

Hope things will improve (legs, rain, plumbing). Have a fun weekend.

The cake is beautiful, Liz. They should be very happy to have it.

I do hope you get some relief from the physical and emotional symptoms very soon.

Also, hope that water tank will be at your door before the week is up!!

Hi Liz, I am so sorry about all the problems you have been having. I hope things turn around real soon.

The cake is gorgeous! How in the world do you get the frosting that smooth? Mine always has knife or spatula marks. You are so very talented. Love, Carol

Hi All

The secret to getting the icing smooth is that I use what is called 'plastic icing' or actually fondant. You knead it until it is very smooth & gets a sort of glow & then roll it out just like pie dough. Then comes the tricky part. I polish the top & then lift it with the help of my rolling pin & place it on the cake. You then have to quickly smooth it down nudging it into place on the sides. I usually measure the cake, top & sides, with a piece of string & roll the icing out to a round of that diameter. You have to quickly cut off any excess so that it does not drag down & then I polish & smooth it using a piece of xray film. You can make the icing yourself but it is a pretty tedious job so I usually buy it from the cake decorating shop. This cake is a 12 inch one & took 2 kilograms or about 4 1/2 pounds of icing. You usually only use this type of icing on rich fruit cakes as this one is. Kneading the icing is quite theraputic, I find. I plug in my mp3 player :music: & sway to the music. :lol:

I make the flowers using 'flower paste' or use some of the fondant adding some gum traganth which makes it set quite hard.

I'm sorry you are having problems physically and emotionally. Every time I get sick with something that lasts a while, I feel like it will never go away, and I get depressed. No one likes being sick.

I hope you start feeling better very soon!!!! Please keep us posted.
