Apparently some packers/retailers are packing meat in carbon monoxide, because it hides the signs of spoilage, and makes meat look fresher than it actually is. What an appetizing thought.

Yup, Geoff and I had read that. One of the reasons we went to buying a local cow last year. If you look at packages of meat in WalMart and even in one of our local grocery stores, you can tell the meat is packed weird...gets a glossy shinny, watery look to it. Just looks yucky despite being red.
