Lemon Curd Tart

Lemon Curd Tart

Sweet Pastry Tart
1-1/2 cups GF flour blend
1/4 cup brown sugar
2/3 cup DF/CF butter
1 large egg
Mix together and pat into a tart pan or pie dish. Bake at 400 for 10-12 minutes.
Filling In a double boiler:
1/2 cup sugar
1/2 cup fresh lemon juice
6 tablespoons DF/CF butter
1 tablespoon fresh grated lemon zest
3 large eggs, beaten
Whisk this until a custard forms and it bubbles.
Spoon the lemon curd into the cooled tart shell and smooth.
Top with fresh blueberries.
For those of you that don't do the GF flours you can still make the lemon curd and put in ramekins and chill and top with blueberries.
