When can I start to tolerate veggies and fruits
Okay so I have been GFCF for about 10 months now and I am wondering when I might be able to add back those lovely fruits and veggies?
I ate some applesauce 4 days ago and had D the next day. Ate corn, peas and carrots last night (very well cooked) and had D this morning.
Ugh.. I should be getting \back my food allergy tests soon (Ige and IgA) so I hope that sheds some light on this... but if not what should i do?

Dr Fine test shows positive for gluten and casien but negative for soy, eggs, and yeast
Maybe its UC maybe its MC? Who knows at this point, but at least I know my intollerances now... so heres to the road to healing!

Eliminate all grains and processed food. Yes GF mixes are processed food.
No labels to figure out on winter squash, fresh caught fish and organic fruits and vegeatables.
Within a year I began to be able to eat all the great fruits and vegetables.
Just ask. Lots of others have found the same thing in the Paleo diet.

After about a year, I was able to add a few more vegetables to my diet, (IOW, in addition to the squash and green beans that I could eat all along, in small quantities). It took me roughly three years before I could eat virtually all fruits and vegetables, and I still haven't had the guts to try lettuce again, though I'm pretty sure that I could tolerate it at this point. LOL.

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
I have one concern on the Paleo diet... That I will not get all the calories that I am getting now and will lose weight.
Rice is a staple for me and is not allowed on a Paleo diet. I cant tolerate nuts all that well yet so there is another fatty high cal high protien food that i would not be able to eat. What could I substitute rice for on a paleo diet?

I'm with you as far as the Paleo diet and feeling that I wouldn't get the calories that I need. I know just going gluten and dairy free has made me lose weight and I haven't been able to gain any back. I have never been a snacker so I don't eat between my 3 meals a day and I've never required alot of food to feel full.
I do pretty good with most steamed veggies, but squash and sweet potatoes will give me looser stools. What is really weird is that I have no problem with cooked cabbage or broccoli..
I saw that you are allergic to coconut. I am allergic to fish and wouldn't wish the reaction on anyone..

It's difficult to say - we're all so different in the way our digestive systems perform, and react to different foods. I was always so impatient that I had to "test" myself every few weeks, but it finally dawned on me that by triggering frequent minor reactions, I was probably just slowing down the healing process, so I stopped doing it for a long time. One day I decided to start testing again, and eureka! I was able to eat all sorts of things that I hadn't been able to eat for a long time.
Here's something you can try for a rice substitute, that should work in a paleo diet - a way to make cauliflower "rice", faux potato salad, and faux mashed potatoes:

You'll have to cut out the butter in the "rice", and the sour cream and cheese in the "faux mashed potatoes", but basic mashed potatoes shouldn't have sour cream and cheese, anyway - that's gettin' into the gourmet category. LOL.

I agree with you. I was on a "modified" paleo diet, (I never gave up mashed potatoes), for a while, and I developed the habit of snacking pretty often between meals. I suspect that whenever the original paleo people weren't able to kill or capture abundant fresh meat, and they had to live off other food sources, they were probably almost full time "grazers". IOW, I'll bet they continually snacked on whatever they could find, as the roamed the countryside.
What do you think of the cauliflower "recipes" that I referenced, from the low-carber forums? Ever try anything like that?

Do you think that since I have trouble with veggies that cauliflower would be okay to eat? I thought it was much like broccoli and had ltos of tough fiber in it?????????
So I will lay off the veggies for a while and see what happens a few months down the road from here. I guess that means I should give up nuts as well.

I have tried the faux mashed potatoes using cauliflower and it is quite good! Of course, I would LOVE to dump some dairy(cheese) in, but unfortunately can't, or you know where I'd be off and running to!!!!

i did not think that I had problems with potato before but the past 2 times i have had potato chips and the last time I had mashed potatoes I did not feel good teh next morning. That MIGHT be because of the grease in the chips (or possible dairy and gluten cc because of the manufacturing process used by Lays) or it could have been because I ate peas, carrots, and corn with my mashed potatoes that one day. They veggies were cooked but maybe I just cant tolerate them just yet.
Usually I dont have any troubles with a baked potato but I am waiting until the weekend to give the potatoes a whirl. I ahve tried avacado and in small amounts it is okay and hummus I have yet to try because it is mainly made of beans or chickpeas? Plus I dont like how they put in so much garlic and onion powder and oils. I guess I can try making it myself (or get my wife to do it because she likes hummus more than I do- I do have a great wife who likes to bake GFDF things to try and fatten me up).
I am still having some trouble gaining weight. Any ideas on that? Could it be another good intolerance? Or is it because I was always skinny? However when I started to get sick to my worst point I had lost over 25 pounds (from 145 to less than 120). Now for the past year I have consistantly hovered around the 123 lb mark. I am also playing in an adult baseball league so I am getting tons activity than I was before so I could be buring off all those calories I am trying so hard to keep in. I think I have lost eery inch of fat on me (but on a brighter side I think my muscles are getting more defined and bigger- and I can see an outline of my 6 pack again-- hadnt had that since senior yr in highschool- I guess the freshmen 15 covered that up quickly and I am sure all the beer, pizza, McDonalds, and other crap I ingested didnt help all that mcuh. MMMMMMMMMMMMMMMMMm piiiiiiiiiza- oh I miss pizza

I'm surprised that you can eat nuts, if your system is sensitive to something as bland as potatoes. Nuts gave me a fit for years, and they still make me feel a little cruddy, but at least I can eat them without having D, now.
If you will do a calorie check, (compare calories ingested, with calories burned), I think that you will see why you aren't gaining any weight. Exercise is the key to losing weight, and if you get enough of it, you can still lose weight, no matter how much you eat, (within practical limits, of course).

I think you are right on about the calorie check. I know that I don't get enough calories during the day.
There have been studies on why some people are naturally thin and I can relate to 8 things that they have stated.
1. Feel satisfied when eating rather than stuffed. I can have 2 bites of something left on my plate and push my plate away.
2 Hunger isn't an emergency. If I'm busy doing something around lunchtime, I don't stop to eat. Eating or hunger isn't my priority when I'm preoccupied with doing something.
3. I am definitely not a stress eater or eat when I have the blues. I am the complete opposite.
4. I eat more fruit and less fat during the day.
5. The majority of my meals are well planned staples.
6. A sense of restraint. Meaning I'm not a gorger..
7. I'm very active.
8. I sleep well. Supposedly, a lack of sleep, even at 2 more hours a week, is linked to lower levels of the appetite-suppressing hormones.
Interesting facts and true in my case!

I honestly don't know if I can eat beans, or not, (other than green beans), because I haven't eaten any in a number of years. I probably can, but I never was a big bean fan, and after reading all the stuff about lectins in the posts here, I haven't had the urge to try them, again.
