1st Place Chili Con Carne

Post by Gloria »

1 lb. ground beef
1 large onion, sliced
1 green pepper, chopped
1 large can (1 lb. 13 oz.) tomatoes
1 large or 2 small bay leaves
1 tablespoon chili powder
1 1/2 teaspoon salt
dash cayenne pepper
1/8 teaspoon paprika
1 can (15 1/2 oz.) kidney beans

Brown ground beef in skillet (no fat added). Add onion and green pepper; cook until almost tender. Add tomatoes and seasonings. Cover. Simmer gently 2 hr. (or 4-6 hr. in a crockpot), adding bean liquid and water a little at a time if needed, to keep consistency of thick soup. Add kidney beans; heat through. Remove bay leaves. Serves 6. (210 calories per cup)
You never know what you can do until you have to do it.

Gloria,
This is a very similar recipe to our venison chili We used Ranch style beans instead of kidney beans and Rotel tomatoes instead of the green pepper and tomatoes. It does make it a little spicy. We also browned the onion in a couple of slices of bacon. Yours sounds yummy especially since I am avoiding spicy right now! Congratulations on the win!
