Peanut Butter Cookies - GF, DF, SF, YF, CF

Ingredients:

1 cup sugar
1 cup peanut butter
1 egg

Mix ingreds. together. Roll into balls and flatten with a fork (You can dip fork into rice flour or GF powdered sugar first before using to flatten each cookie). Bake at 350 degrees for 12-14 min. After removing, let sit on cookie sheet on top of stove for a while to continue cooking. Makes 2 dozen.

My daughter and i made these over the weekend and they were so good! She loved helping and even my husband said they are his new favorite! :grin:
Diagnosed with MC on 1/8/2008 after 7 months of flare. 2nd colonoscopy and new diagnosis of UC on 3/11/2008.

These are the BEST!!!
Another one of my addictions!!!!!
Have some of my family members hooked on them too!
I put a tsp of baking soda in mine along with the other ingredients.
