GF Brownies
2 1 ounce squares unsweetened chocolate
1 stick of butter or margarine
2 eggs
1 cup sugar
1/2 tsp. vanilla
1/4 tsp. xantham gum
1/4 cup gf flour mix (like Bob's Red Mill All Purpose)
1/2 tsp. salt
1 cup coarsely chopped nuts
Melt butter and chocolate slowly (so chocolate doesn't burn)in the micro or on the burner. Put into a 8x8 greased pan. Add wet ingredients and mix. Add dry ingredients and mix. Bake at 325 for 40-45 minutes.

I don't really remember except that it takes the place of wheat gluten in almost every recipe for gf baked goods, so it must be a binding substance. It is expensive, but you only use a very small amount per recipe. You can get it at most health food stores. Wild Oats should have it.
