GF Brownies Recipe

GF Brownies

2 1 ounce squares unsweetened chocolate
1 stick of butter or margarine
2 eggs
1 cup sugar
1/2 tsp. vanilla
1/4 tsp. xantham gum
1/4 cup gf flour mix (like Bob's Red Mill All Purpose)
1/2 tsp. salt
1 cup coarsely chopped nuts

Melt butter and chocolate slowly (so chocolate doesn't burn)in the micro or on the burner. Put into a 8x8 greased pan. Add wet ingredients and mix. Add dry ingredients and mix. Bake at 325 for 40-45 minutes.

Kathy,

I don't really remember except that it takes the place of wheat gluten in almost every recipe for gf baked goods, so it must be a binding substance. It is expensive, but you only use a very small amount per recipe. You can get it at most health food stores. Wild Oats should have it.

Yes, Alice is right!
Xanthan gum is a binder that we use in GF baking.
Usually you use 1 tsp. per cup of GF flour blend.

Oh dear - I didn't even notice that. Did you omit it then? Or not use the Bob's mix? I think you could use just about any mixture of gf flours.

I meant Bob's carries xanthan gum that can be added to their flour mixtures. Thanks again!
