Pumpkin Bread Or Muffins

Pumpkin Bread Or Muffins

1-3/4 c GF flour
1/2 tsp xanthan gum
1-1/2 c sugar
3/4 tsp salt
1 tsp cinnamon
1 tsp baking soda
1/4 tsp baking powder
1/3 cup oil
2 eggs
1/3 c water
3/4 c pumpkin puree
1 c chopped walnuts
Mix dry ingredients together
Then add eggs, oil, water & pumpkin
Mix well.
For the pumpkin bread I use a 9x5 inch loaf pan.
Bake at 350 for 55--60 minutes
For muffins, fill muffin tins 2/3 cup full and bake at 350 for 18-20 minutes..
