She definitely has been busy as a beaver, posting some great looking recipes. It's really nice having a great chef on the board, who's willing to share her talents. With all her recent additions, we're getting close to a hundred recipes, in that forum.

Hi Dee,

I have a request for a GF,SF,DF candy bar type dessert. I was sure that I had found one involving microwaved unsweetened chocolate, but I can't seem to find it. Rick is having a major chocolate attack, as am I, and something tasty to munch on would be great. Being new to the whole dietary restrictions, I'm getting quite a lesson from all your recipes, thank you so much for sharing them, they have made this so much easier.

Hi Carrie!!
If you can find Enjoy Life semi-sweet chocolate chips which are gluten, soy & dairy free you can melt those down in the microwave.
Then add whatever you'd like, chopped walnuts, pecan, shredded coconut, etc....
Melt them starting with 20 seconds. Stir. Another 20 seconds. Stir.....
Then after mixing in your favorite ingredients, drop by a spoon on a cookie sheet covered with wax paper..
Then refrigerate or freeze to quick chill them..
I then store mine in the refrigerater.
HF stores, Whole Foods, Trader Joes carry the chocolate chips.
Another idea is taking Nestles or Baker's unsweetened baking chocolate (on grocery store shelf in baking product aisle) and melt the little ounce bars down in the microwave. When melted add 1 tsp. of oil, and powdered sugar to your sweeteness preference, stir, add what other ingredients you like, and then spread it out onto a cookie sheet. Chill.
After it is set up you break it up.... Kinda like a bark.....

I'm adding my thanks for the great recipes. I can pass up most candies, but I'm a sucker for chocolate. I'll have to try some of your ideas for chocolate cravings.
You never know what you can do until you have to do it.

Just had to thank you again for the candy bar recipe. I just made it and it is wonderful......now if I can restrain from eating all of it before Rick gets home.... :lol:
