Chocolate Cupcakes

Chocolate Cupcakes

1-1/2 c GF blend
1 c sugar
3/4 c unsweetened cocoa powder
2 tsp baking powder
1 tsp baking soda
1-1/2 tsp xanthan gum
1/4 tsp salt
Blend well.
Then add:
1 c applesauce
2 egg whites
1/4 c oil
2 tsp vanilla
1/2 c chocolate chips (the non dairy, gluten & soy free, is Enjoy life semi-sweet chips
Beat all together except the chocolate chips . You stir those in last.
Line muffin tins with cupcake papers and fill 2/3 c full.
Bake at 350 for 18-20 minutes.. They should spring back when touched in the middle when they are done.
