GF-DF-SF Peanut Butter Cups

Been playing around in my kitchen again!!
And the thoughts of a chocolate peanut butter cup took over!!!
Sooooo, this is what I did.
I took 1 package of Enjoy life semi-sweet chocolate chips and melted them in a microwave safe bowl. About 1 minute.
Then I put 1/2 cup of peanut butter ( I use Smucker's All Natural) and put it in another microwave safe bowl and heated it about 45 seconds.
Lined my "mini" muffin pans with the papers.
Took a teaspoon and put a little of the melted chocolate in the bottoms of the papers, then took a dab of peanut butter,put it on top of the chocolate, then topped it with some more of the melted chocolate..
Then in the freezer they went for 15- 30 minutes!!!!!!
My craving has now been met!!!!!!!! :lol:

Dee, those sound yummy and easy!!! i will have to try those this weekend!!
Diagnosed with MC on 1/8/2008 after 7 months of flare. 2nd colonoscopy and new diagnosis of UC on 3/11/2008.

Thank you again! The only chocolate candy I've eaten since August has been the Ritter 71% bars because they have no dairy nor soy. This gives me another chocolate treat.
You never know what you can do until you have to do it.
