Egg-Free, Dairy-Free Chocolate Snack Cake

Egg-Free, Dairy-Free Chocolate Snack Cake

1 2/3 c. GF flour
1 c. brown sugar (packed)
¼ c. cocoa
1 tsp. baking soda
½ tsp. salt
1 tsp. xanthan gum
1 c. water
1/3 c. vegetable oil
1 tsp. vinegar
½ tsp. vanilla

Heat oven to 350°. Mix flour, brown sugar, cocoa, baking soda, xanthan gum and salt with fork. Stir in water, oil, vinegar and vanilla completely. Pour into ungreased square pan, 8x8x2 inches. Bake until wooden pick inserted in center comes out clean, 35-40 minutes. Dust with powdered sugar if desired.
Note: Cake can be mixed in pan if desired.

Applesauce Snack Cake: Omit cocoa and vanilla. Stir 1½ teaspoons allspice into the flour mixture. Reduce water to ½ cup and stir in ½ cup applesauce. Bake 40-45 minutes.

Chocolate Chip SnackCake: Omit cocoa and vanilla. Stir 1/3 cup chopped walnuts into the flour mixture. Sprinkle 1/3 cup chocolate chips over batter in pan. Bake 40-45 minutes. (Chocolate chips may sink or gravitate to center.)

Double Chocolate Snack Cake: Sprinkle ½ c. semisweet chocolate chips over batter in pan. Bake 40-45 minutes.

Maple Nut Snack Cake: Omit cocoa and vanilla. Stir ½ cup chopped pecans into flour mixture. Stir in ½ teaspoon maple extract with the water. Bake 40-45 minutes.
