Pasta, Garlic, Bacon Toss

Post by Dee »

I made this with the "wow" chicken..
Brown about a 3rd of a pound of bacon that is cut vertically in 1 inch strips.
While browning the bacon, mince 4 garlic cloves. You will add these to the bacon & drippings after bacon is browned and crisp. Leave browned bacon in the skilllet and add garlic. Turn off the heat.. Just let the two fuse together.
In a stock pot :
Bring enough water to a boil that you will add:
6-8 ounces of Tinky'ada brown rice fettucini ( I break the dry pasta in half when I add it to the boiling water.)
Boil 16 minutes.
Drain the pasta and rinse under cold water for at least 30-40 seconds.
Drain very well.
Put the pasta back into the pot and once again turn to medium heat. Add bacon, drippings and garlic and toss well & heat just until it is warm enough to serve.
You can add 1-1/2 cup steamed fresh broccoli or 1 cup steamed asparagus that has been cut into 1 inch pieces
to the pasta dish.
