Doughnuts

Doughnuts

Take:
2 eggs
1 c sugar
2 teaspoons melted dairy free butter or just use oil
3/4 teaspoon cinnamon
1 c apple juice with 1/2 teaspoon vinegar & 1 teaspoon baking soda added
2 c GF flour blend
1 teaspoon xanthan gum
Mix well.
Grease muffin tins
Put 2/3 cup of the mixture in each muffin tin
Sprinkle with cinnamon/sugar
Bake at 325 - 20-25 minutes
You can also melt dairy free chocolate chips and drizzle over baked doughnuts.
I have doughnut pans but I thought I'd post as far as using the muffin tins for those of you that don't.
