Homemade Waffles

Homemade Waffles

2 eggs, "separated"
2-1/2 c DF milk
2 c GF flour blend
2 tsp baking powder
1/2 tsp xanthan gum
6 tablsp oil
4 tablsp yellow cornmeal
1/2 tsp salt
Mix eggs yolks & milk together.
Mix together the dry ingredients and add to the yolk/milk mixture.
Add the oil.
Beat egg whites until fluffy and fold into the above mixture.
I added 3/4 c fresh blueberries.
Lightly spray your waffle iron and add a cup of waffle mix, depending on the size of your waffle iron.
This recipe makes alot so what I have left, I make up and cool, then put them between 2 sheets of wax paper and freeze.
I have a round waffle iron that after making a waffle, the waffle can be separated into quarters, which makes it easy for me to pop 2 quarter frozen pieces in my toaster to heat thru.
