What did YOU eat today?

OK, gang, we haven't shared our menu ideas for while, so it's that time again. I always get new ideas when I hear from others here. :hungry:

Yesterday

B - banana
L - homemade chicken/veg. soup and leftover turkey meatloaf
D - grilled pork chops, baked potato, steamed carrots, beets
Snack - pistachios (SP?) and potato chips (my downfall! - LOL!)

Today

B - fruit salad with watermelon, cantaloupe, grapes, blackberries, blueberries, strawberries, banana, apple, and pineapple
L - homemade chicken-veg. soup and sauteed (in olive oil) salmon cake (made with leftover mashed baked potato)
D - crockpot chicken dish - made with chicken, sweet potatoes, potatoes, turnips, carrots, parsnips, and onions; spinach, small glass of red wine
Snack - more potato chips and 3 pieces of maple sugar candy.

GF Pizza + Cheese, Peperoni, Olive, Mushrooms, Canadian Bacon
Green Apple
Peas

Snack
Handfull of hazelnuts.

Worked late and didn't bring anything to work so it was bad...

After dinner snack - hey I was on a roll of bad things to eat so I figured I go out with a bang.

Yesterday:

B - buckwheat cereal, Rice Dream milk, banana, pineapple juice

L - homemade turkey noodle soup, rice crackers w/olive spread, Quinoa cookies, strawberries

D - chop suey with mock soy sauce (it tasted great, Dee!), Rice Dream milk

Today:

B - buckwheat cereal, homemade rice milk, strawberries, pineapple juice

L - rice cake w/almond butter + apricot jelly, applesauce, Quinoa cookies

D - potato pancakes, sausages, applesauce, combo homemade rice milk/Rice Dream milk
You never know what you can do until you have to do it.

Yesterday

L - Fried chicken, mashed potatoes, GF, DF, SF Kinnikinnick donut
D - Nuked leftover pork sausage, tortilla chips
Snack - banana, apple, Dr. Pepper, made with cane sugar

Today

B - GF Organic Corn Flakes with a little sugar and hemp milk
L - Pork sausage, baked potato, (with nothing but salt), banana
D - Nuked leftover pork sausage, tortilla chips
Snack - banana, Dr. Pepper, made with cane sugar

B - slice of imported Swiss Cheese
L - Nothing
D - salmon, cup rice, carrots & peas
Of course 2 glasses white wine

Tuesday -
B - rice crackers and diced peaches in pear juice
L - 1/2 c cottage cheese, sliced beets, olives, garbonzas
D - 1 slice of ham, mixed veggies, salmon
Snack - Glutino chocolate sandwich cookies - 3

Snack: 2 pieces of my chocolate, pecan, coconut clusters
Tuesday:
Breakfast:
Scrambled eggs with bacon
Toast

Banana
Lunch:
Chicken salad lettuce wrap
handful of chips
Dinner:
Grilled ribeye steak
Fresh cut fries
Tossed salad with cucumber, shredded carrots
Ice tea

YAY! I didn't know Rice Chex were GF now either!

Panda Puffs are from the same line as the Koala Krisps that Mike noted, they are a light peanut butter flavor, not bad!

I have 2 questions:

Gloria - do you use rice or buckwheat noodles (or something else) in your soup?

Maggie - You are eating dairy! Are you sure that isn't a cause for your continued problems? I've always thought you were an MI similiar to me - in fact, I'd probably bet that genetically you are a DQ1 like Gloria, Rick, and me. DQ1s take the longest time to achieve remission, and have the most intolerances.......and dairy seems to be one of them, unfortunately.
(I miss cheese the most!).

I use rice noodles. I find them in the Chinese section. I don't think I've ever seen buckwheat noodles.

The broth was chicken, but the meat was Boar's Head turkey. I added carrots and parsley and dried onions, I think. I found the 40% B.H. turkey you recommended in another store, but I'm still using up the regular turkey that I bought a while ago. I freeze it in cubes and add it to soups and salads on the fly.
You never know what you can do until you have to do it.
