Oven Or Crockpot Herbed Pork Roast

Oven Or Crockpot Herbed Pork Roast
Combine together in a gallon size ziploc bag:
1 cup soy sauce
2 garlic cloves, minced
2 tablspoons lemon juice
2 teaspoons dried basil
2 teaspoons dried tarragon
1 teaspoon dried ground sage
1 teaspoon dried chives
1 teaspoon pepper.
Zipper up the bag and give it a good shake to mix up all of the ingredients..
Then place a 3-1/2 to 4 pound boneless pork loin in the bag.
Refrigerate this over night.
You can put the pork loin and the ingredients that it was marinading in, in the crockpot on low for 6-8 hours
Or place it in a a roasting pan in the oven and bake 2-1/2 hours.
If you use a smaller sized pork loin, just cut the ingredients and baking time in in the oven in half.

This is only one soy sauce substitute that I use since I can't do soy either.
3/4 cup of garlic vinegar (*see note)
3 tablespoons dark molasses
3 teaspoons onion powder
Combine all the ingredients and pour the mixture into a glass jar. Refridgerate and use as needed.
It lasts about a month in the fridge.
Warm and shake well before using.
*Note:.
You can make your own garlic vinegar. Slightly heat the vinegar; pour over peeled and sliced garlic, (you choose the amount - I used 5 good-sized cloves )let stand overnight, strain and discard the garlic and combine with remaining ingredients.
