Hi Pat,

As I mentioned in another post on the Main Message Board, the only fly in the ointment that I can see for MIs is the corn in the food starch, lactic acid and sorbic acid. I noticed that delivery date also - apparently they either have a huge backlog, or they make it to order.

Well, the corn shoots this idea for Rick, we are going to attempt one of the cashew cheese recipes and hope that controls his cheese craving. Being 1/2 Italian, Rick is finding giving up tomatos and cheese the hardest of all the foods on the endangered list, It's just in his DNA.........

Hey Dee,

That's what I'm hoping for, either the cashew one, or the coconut milk one. Since you told me about coconut milk, we have started using it to make ice cream and other goodies.... :chef2:

It is OMG wonderful.........I added a little sugar and some coconut, and it has been our dessert each evening for the past couple of days.....since the coconut milk is so rich, it doesn't take much of it to make you feel stuffed. I have never been much of a ice cream eater, but love this stuff...I will be holding you personally responsible when I have to go buy bigger jeans....

Carrie,
Happy that the coconut milk is working out for you with the making of ice cream... It's really good in smoothies, too...
