Hi Dee,
I hope you're GI system is back to "normal" by now, and you're feeling fine. I'm just wondering if the cashews still appear to be the culprit, or if you uncovered any other suspects.
I seem to be OK, if I only eat a small to moderate amount of nuts, (or nut butters), but if I eat a lot, I always regret it. Do you think that the amount could be a possible issue for you?
Love,
Tex

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
Thanks for asking Tex!!
It took a couple days to get back to normal.
I haven't tested the cashew cheese again to see if it was the offending food, although, I do believe it was.
I eat almonds and walnuts, in small amounts and they don't seem to bother me. I'm going to be keeping an eye on some suspects to see how I react.
I made myself some strawberry ice cream using my "coconut" milk recipe and haven't had any ill effects from it.
Love
