One thing I miss are the nice big thick homemade noodles that my mom and I used to make for chicken noodle soup, and I could use some right now with my cold. Anyway, how might I make those types of noodles and have them be gluten free?

How do you make GF Noodles for Chicken Noodle Soup?

GF Noodles
1/4 c brown rice flour
1/4 c white rice flour
1/4 c potato starch
1/4 c tapioca starch
1-1/2 tsp xanthan gum
1/2 tsp salt
1 egg
1 tsp oil
1-3 tablsp water
Mix dry ingredients well.
Then add egg, oil & water.
Your dough probably will be sticky. If it is add a little more white rice flour.
The dough should form a ball. Then knead it about 3-5 minutes.
Let it sit for 30 minutes.
Then flour an area with rice flour and roll "very" thin. Cut to your desired size and length.
I also use Tinky'ada's brown rice fetticcini noodles . They seem to really hold up nicely in soups and casseroles, etc......
