Hi, fellow double DQ1!

I was so impressed reading your recent post on the main Board about all of the foods you have now eliminated. But what exactly ARE you eating?
As your clone, I'm very interested in menus for folks like us..... always looking for new ideas.

It does invlve a whole new way of eating, but I have found that over time I have come to PREFER my crazy diet. Of course, it has been almost 8 years for me, so I guess it DOES take time. And I often wonder if it may be much healthier than those carb-loaded diets.

Hi Polly,
This is what I usually eat:

Breakfast
buckwheat cereal with bananas and rice milk
occasionally: rice cereal with strawberries and rice milk
occasionally: gluten-free waffle w/fruit syrup
pineapple juice or cherry or raspberry syrup with water
occasionally apple juice

Lunch
beef vegetable soup (ground beef, potatoes, green beans, carrots in an organic broth)
chicken noodle soup (chicken or turkey cubes, rice noodles, carrots in an organic broth)
Turkey sandwich on almond rice bread with homemade mayonaisse and mustard
potato chips
occasionally: rice yogurt
gluten-free cookies, muffins
applesauce
canned peaches, canned pineapple, canned tropical fruit, fresh strawberries
fresh mango

Snacks
gluten-free cookies
Whole Foods honey-seed-nut bar
occasionally: chocolate

Dinner
chicken, beef, pork, turkey, chicken sausage,
rice noodles, potatoes, rice
broccoli, carrots, asparagus, green beans
occasionally: potato pancakes, spaghetti, chop suey, meat loaf

Dessert
raspberry sorbet

Gloria,

Thanks so much for the menus.

Have you found a commercial/ frozen GF waffle without corn or soy? Or are you OK with corn products? Have you discovered Namaste products? They are super for us double DQ1s. I have their waffle and pancake mix, and it is free of: gluten, wheat, potato, soy, corn, dairy, casein, and sugar. It does have xanthan gum in it but I guess they must know that it is not made from corn.

Do you make your own soup broth? The only commercial ones I have found that are safe for me are the Imagine broths. So many of the others contain yeast. :roll:

Where do you get the almond rice bread? Is it yeast-free? And how do you make your mayo? I didn't know about rice yogurt. Who makes it?
And tell me again which rice milk agrees with you, please.

I had to laugh about the raspberry sorbet. There is only one brand/kind of sorbet I can tolerate, and it's the raspberry one made by Sharon's.

I found a pretty easy waffle recipe that doesn't use eggs. I'll try to post it in the recipes section.

I think I'm OK with corn, but I'm avoiding it as much as I can until I'm sure.

I haven't purchased any Namaste products. I did see the waffle and pancake mix at one of the grocery stores. I'll have to try one.

I found a wonderful bouillon while visiting my daughter in Utah. It is called Better Than Bouillon and is made by Superior Quality Foods in Ontario, web site www.superiortouch.com . It comes concentrated in a jar, so I can spoon out just enough for 1-2 servings. The ingredients for the chicken broth are: Chicken meat and natural organic juices, salt, cane sugar, maltodextrin, natural flavor, dried onion, potato starch, dried garlic, tumeric and spice extractives. Both the beef and the chicken seem to have the perfect flavoring. The pricing on their web site is a little more than I pay in Utah. I haven't looked for it around my home yet.

I believe the almond rice bread is available at Whole Foods. It's made by Food for Life. It does have yeast in it, so I eat it no more than once every four days. I don't seem to react to it, but I'm still on 6 mg. of Entocort.

I found a great egg-free mayonnaise recipe that tastes nearly the same as Miracle Whip. It also holds its consistency, unlike another recipe I tried earlier. I made it before I stopped eating corn, so it does have a 1/2 teaspoon of Instant Clear Jell, a corn-based thickener. I recently bought some arrowroot and am going to try using it in the next batch. The Instant Clear Jell doesn't need to be cooked, which makes it nice for thickening uncooked products. I also use the mayo in place of sour cream on baked potatoes and on Mexican dishes. I'll post that recipe in the recipes section also.

The rice yogurt is called ricera and it is available at Whole Foods. It isn't real tasty. I think more sugar would help, but it does have the yogurt cultures.

I fluctuate between the Rice Dream Organic rice milk and homemade rice milk, depending on whether I had time to make my own. I mentioned that I seem to do better with the Rice Dream. It occured to me today that even though the brown rice I use to make my own rice milk doesn't say enriched on the package, it's possible that it's cross-contaminated. I probably should be washing it before I use it like I do with the white rice. I don't seem to have a problem with the Rice Dream, but again, I'm on Entocort.

How wierd that you also eat raspberry sorbet. The one I buy is called Ciao Bella.

I'm fortunate to have two stores within a couple of miles that carry many unusual items. One of the stores specializes in foods from all over the world. It sells pure natural fruit syrups from Poland. A 1 ltr jar of raspberry syrup (raspberry juice, water, sugar) costs only $5. Lowell foods sells it: www.lowellfoods.com . They have a store locator on their website so anyone could check to see if a store nearby carries it.

Thanks for all of the great information! I was so excited about the bullion, but when I called the company, I was told that all of them contain yeast and that the maltodextrin is made from corn. Sigh. Thanks again.

Oh, boy. I haven't had a reaction to either the beef or the chicken, but I'm still on 6 mg of Entocort a day. It's too bad that they include yeast and a corn derivative because they are so good.

I appreciate your taking the time to call them and let me know. It just goes to show that you can't trust any labels. It's best to go to the source.

The Nastaste brand stuff is great, we have used their brownie mix, and also their pizza crust ( makes a great flat bread for meals, with no yeast ) and their waffle mix. Rick loves their stuff........

When I was shopping at a local store, I noticed they carried the Better Than Bouillon broth. But when I looked at the label, it had ingredients (yeast and whey) that are not listed on the jars I bought in Utah.

Soo, I emailed customer service and asked them why the jars in Utah had different ingredients on the label than the ones in Illinois.

That was two weeks ago and I haven't heard a word from them. I'm wondering if the jars in Utah were manufactured before Jan 2007 when the new labeling law went into effect. The Utah store is pretty new, but they could have brought the jars from another store.

Any thoughts on this? I love this broth and don't seem to react to it, but I'm still on Entocort. I've eliminated so many things from my lunch already, I dread having to eliminate one more thing. I suppose I'll have to start making my own broth. The boxed stuff is pretty pricey.
