GF for dummies? (like me!)

Hello everyone!

Quick question--I'm really trying to get myself educated on GF foods since MC seems to show gluten intolerances.

Since I'm still trying to heal the gut and can't seem to stomach/handle much food, does anyone have a few recommendations on some bland but nutrititous foods that work(ed) for them during healing?

So far I have been living on baby food, rice cakes, instant breakfast, rice cakes, a little chicken, rice cakes, and sweet potatoes. And rice cakes. :razz:

I tried cooking some broccoli/cauliflower to mush stage, but they still caused upset...guess I'm not ready for them yet.

Any ideas are most appreciated!

Hi Jill,

Thinking about the rice cakes - they're pretty coarse, (abrasive) - I wonder if they might be irritating the lining of your gut, the way that fiber does for most of us. I don't recall anyone reporting that particular problem, but then I don't recall anyone else who mentioned eating rice cakes regularly, either. When our gut is inflamed, it can be extremely sensitive.

For menu ideas, here are some old topics, where we posted what we were eating at various times. Since almost everyone is different on their specific intolerances, you'll have to kind of "weed" through these posts, looking for ideas, while culling out things that are unsuitable for you. They are listed with the oldest topic on top, and the latest on the bottom. For a little background information, Polly has many intolerances, and she is following a paleo diet.

HMMMM....I hadn't put 2 + 2 together on the rice cakes possibly being abrasive. That could explain a few things.
Here I thought they would be gentle and easily digested......

Hi Jill!!
First off, you are not a dummie!!
Trying and incorporating a completely different diet is not an easy task to do.. Some of us were at the same point that you are at right now.
As far as some food suggestions can you handle eggs???Scrambled??
Smoothies, banana, pineapple, coconut milk, a little honey.
Soups, chicken rice or noodle. The carrot, apple soup recipe that I have in the recipe forum is very comforting.
Applesauce
Mashed potatoes
Sweet potato
Can you handle canned grren beans??
Le tme know what all is in your diet now and I'll try to help you some more..

A fellow Ohio-an! I'm in Ohio too. Nice to meet you!

Right now my diet is pretty limited. Here's what I've been living on:

Sweet potatoes
White potatoes
Chicken breast
Ground turkey
Puffed rice
Cream of rice
Corn tortillas
Rice cakes
Baby food (fruity flavors only)
Rice milk
Carnation instant breakfast

I haven't tried green beans yet--guess certain things still turn me off, if you know what I mean. I guess I am finally getting to a point where I have *some* appetite, so I'm trying to get more nutritious food in when I can.

Eggs are hit or miss....I hard boiled a few last week, and one day they would be ok, and the next...no dice. Maybe it was a combination of other things I ate that day too.
I'm trying to monitor all I eat and watch for reactions, but it's all still so new to me, plus my intestines are still unhappy!

I'm going to have to check out the recipe forum....haven't seen that yet.

Don't remove rice cakes from your diet just yet. My concerns about their abrasiveness may be groundless. While it's true that polysaccharides are somewhat slow to digest, for all I know, the mechanical bonds that hold the rice together may break down as soon as it enters the stomach, and rice in the form of rice cakes may actually be no more abrasive than boiled rice, by the time it gets to the small intestine.

A little experimentation for a few days would probably resolve that question.

As she mentioned, Dee has a lot of excellent recipes in the "Recipe Room". They turn gluten-free meals that used to be almost tasteless, into gourmet treats. The recipes are here:

Adjusting and making any *changes* in ones life is a very TRICKY thing to do-----and being U have to *section* the foods from the GOOD side to the BAD side is certainly one of them----

Dee is a wonderful *cook* and *figurer-outer* meal planner---

Everything will come together----just take a *deep* breathe and relax --

BREADS and STARCHES
Eat 6 to 8 servings a day from this list:
1/2 cup cream of wheat
1/2 cup cooked white rice
1/2 cup mashed potatoes
1/2 cup cooked pasta, noodles, or macaroni
6 small (2 inch square) saltine crackers
1 slice white bread
1 medium size (2-1/2 inch) roll or bun
Do not eat these foods:
Barbecue and taco chips
Bran and granola cereals
Breads and rolls with nuts, seeds, or bran
Corn chips
Hard crackers, such as Ry-Krisp®
Popcorn
Potato chips, french fries, and fried potatoes
Whole-grain breads and rolls
FRUITS
Eat 2 to 3 servings a day from this list:
1/2 cup applesauce
1/2 cup canned or cooked fruits without skins or seeds
1/2 cup mild juices, such as apple, grape, and pear
1/2 of a 9 inch banana or 1 small (5 inch) banana
Do not eat or drink these foods:
Berries with seeds, such as strawberries, raspberries, and blackberries

Desserts made with approved foods from the lists above

Mild gravies and sauces

This is a Bland Food Diet.
If you are eliminating gluten, dairy, soy, corn, yeast, there are other options on the list to choose from. Let me know if you need help substituting for things like pasta, macaroni, milks, etc....

Wow, thanks Dee....much appreciated.

I am trying to watch the gluten, but I think I have learned enough over the past few days to find acceptable substitutes for what you recommended that does contain gluten.

I will also be sure to check out the recipe forum as well.

I had to use that list for my Mother when she was ill.
It is supposed to be a helpful tool for anyone suffering from ulcers, colon problems, nausea, vomiting, and gas....
