Mock Shake & Bake For Chicken

Mock Shake & Bake For Chicken

1-1/2 cups dry GF bread crumbs (homemade or store bought
1/2 c sweet rice flour
1/2 c white rice flour
1 tablsp dried thyme
4 tablsp parsley flakes
1 tablsp dried margoram
1 tabsp paprika
1 tablsp onion powder
2 tsp garlic powder
Mix well & then using two ziploc freezer bags divide the mix.
One bag should coat 3-4 pounds of chicken
When ready to use add 2 tablespoons of oil to mix & blend completely.
Moisten with water a couple pieces of chicken at a time and put in the mixture and shake to coat the chicken.
Preheat the oven at 400 degrees. Place chicken skin side down on a lightly greased cookie sheet. Bake for 20 minutes and then turn chicken and bake another 45 minutes.
