GF Pie Crust

Post by Dee »

1/2 cup GF flour blend
1/4 teaspoon xanthan gum
2 tablespoons brown sugar
1/4 cup chopped pecans or walnuts
1/4 cup oil
Mix well & press into a pie plate.
Bake at 350 for 15-20 minutes. Cool.
This is good to use with fresh fruit like blueberries, raspberries, strawberries, etc..
In a sauce pan add 2-4 cups fresh berries.
2 tablespoons to 1/4 cup sugar (your preference)
Make a slurry using arrowroot or sweet rice flour and water.
When your fruit is heated, slowly pour some of the slurry in until thickened.
Then pour into your prebaked crust. Chill.
I've even used my chocolate pudding recipe and this crust.
