"NO" High Fructose Corn Syrup

Post by Dee »

If you have a recipe calling for light or dark corn syrup you can make your own ..
2 c sugar (White for light corn syrup-brown for dark corn syrup)
3/4 c water
1/4 teaspoon cream of tartar
pinch of salt
Put above ingredients in a saucepan
Bring this to a boil
Reduce the heat and cover for 3 minutes
Uncover & simmer stirring often until it reaches 235 degrees using a candy thermometer. (soft ball stage)
Cool
Put it in a covered container and keep at room temperature.
Will make 2 cups and keep 2 months
