Snickerdoodle Cookies

Cream together:
1 egg
3/4 c sugar
1/2 c shortening
1 tsp vanilla
Add:
1-1/2 c GF flour blend
1/2 tsp baking soda
1 tsp cream of tartar
1/2 tsp xanthan gum
Mix well
Roll into walnut size ball and then roll into :
1 tablsp cinnamon/3 tablsp sugar mixed together
Bake at 350 for 10 minutes.
