Whole Chicken In The Crockpot

Whole Chicken In The Crockpot

1 whole roasting chicken (rinsed & patted dry)
4-5 red potatoes sliced with skins on
1 cup baby carrots
1/2 cup chopped celery
Mix the potatoes, carrots, celery together and put in the bottom of the crockpot with 1/2 cup chicken stock.
In a small bowl mix together:
1 teaspoon each of:
dried rosemary
thyme
basil
garlic powder
onion powder
paprika
Then add salt/pepper to your liking
Rub down the whole chicken with a little olive oil
Put it on top of the veggies in the crockpot
Sprinkle chicken with herb mixture
Cook on low 6-8 hours....
