Questions on the Elimination Diet

I have a question about the Elimination Diet info found here:

For the dairy-casin it says to "eat an ounce or more of an aged white cheese like mozzarella". How do I find out if the mozzarella is aged or is all mozzarella aged?

Mike,

It often says on the label. You want some that has been aged at least 6 months. That way you will know that the lactose is gone and that CASEIN is the only thing you will be testing for.

Wouldn't other aged cheeses like cheddar also be a good test? I guess I hear so often about aged cheddar and I think that has something to do with the sharpness of it, so I'm thinking it may be more clearly labeled.

Just a thought, I really don't know.

Thanks Polly and Katy. I seem to remember some packages having dates, but I can't remember seeing it on mozzarella. Cheddar I have seen this on.

Another question, it says to start after 2 weeks, if I notice I'm better in like say 5 or fewer days than 2 weeks is it ok to start?

The expert on the elimination diet is Jean. The articles she has written for the Info on Diet Forum are part of a book she is writing on the subject. I know she is busy with her birds and job and probably can't post every day - why don't you send her a PM? I know that she answers those promptly.

P.S. If you think the info on gluten-containing toothpaste is unique, you should ask Jean about her encounter with gluten during an intimate situation. Her partner had just showered using a soap that contained gluten. You guessed it! Jean got sick after licking his skin. LOL! Geesh! Is nothing sacred anymore????

P.P.S. Did you know that some envelopes contain gluten? In the glue that you lick to seal them. I don't remember if Jean mentioned that in her articles.

Hi Mike,

The reason that I recommended white cheese is because some yellow cheeses have coloring added and that coloring may contain an intolerance. If you read the cheese label and you don't see any added ingredients, go for it! Polly is right about the aging, I just want to make sure you're testing for casein and not lactose.

I'm excited that you've read the elimination diet. Please keep asking questions. You are kind of a guinea pig for me.
