For those who are casein intolerant, you might try the book---Cooking With Coconut flour--by -
Bruce Fife Most of his recipes say butter or coconut oil.
I have tried his coconut cookies and his muffins and they are delicious.

Thanks, it sounds very good but I'm afraid of the cholesterol. It's always something. AAARRRGGGGGGGGGG.

I used to have a chart that was in the newspaper that ranked the different oils but I can't find it.

I just realized I could use a little olive oil instead of butter on veggies etc.

Joan thats what I drizzle on my veggies---when my TASTE BUDS come back I shall be in heaven---
I never used butter cus belive it or not I never liked it!!!!! and this goes waaaaaaay back to childhood!!!!

Joan,
Coconut oil is composed "predominately" of medium chain fatty acids.
They do not have a negative effect on cholestrol.
I'd use all coconut oil or 1/2 applesauce-1/2 coconut oil in Marilyn's recipes that call for butter.
