A New GF Cookbook With Healthier, Better-Tasting Recipes

Post by tex »

At least that's what this article in the San Antonio Express News says about Jennifer Cinquepalmi's new book, The Complete Book of Gluten-Free Cooking (Aidant Books, $25), which includes recipes for baked goods, as well as Cajun, Italian and Mexican dishes. Supposedly, her recipes minimize the use of starches, which, of course, are the source of a lot of empty calories in so many GF recipes. Here's the article, with some sample recipes:

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.

Thanks, Tex! I read the article and I want to try the recipes. The spaghetti that is in the article sure sounds good. I may even try the bread, even though I do have my favorite bread recipes. Appreciate the heads up!

You're most welcome. Please let us know what you think of them, if you try either or both of them. They do sound good, but I don't consider myself enough of a cook to tackle them, (since they're not the sort of thing that would be cooked on a grill. LOL).
