At least that's what this article in the San Antonio Express News says about Jennifer Cinquepalmi's new book, The Complete Book of Gluten-Free Cooking (Aidant Books, $25), which includes recipes for baked goods, as well as Cajun, Italian and Mexican dishes. Supposedly, her recipes minimize the use of starches, which, of course, are the source of a lot of empty calories in so many GF recipes. Here's the article, with some sample recipes:
