Sweet and Sour Chicken or Pork

SWEET AND SOUR CHICKEN OR PORK

Meat: marinate 2-3 hours (optional)
2 chicken breasts or 1 lb. pork loin, cut in 1" cubes
2 T. Dee's mock soy sauce
1 t. ginger
1 clove garlic, mashed

Coating (optional)
Take out and dip in batter of 2 egg yolks or egg mixed with 4 T. cornstarch.
Deep fry until golden brown or crisp in 3 inches oil at 420°. Set meat aside.

If you choose not to coat the meat, cook the chicken in 3 T. oil until juice runs clear or cook pork until no longer pink inside.

Sauce
6 T. sugar
2 T. Dee's mock soy sauce
3 T. ketchup
3 T. sugar
1/2 c. pineapple juice

mix:
2 T. cornstarch
1/2 c. water

Combine, then heat. When heated, add cornstarch mixture. Heat to boiling.

Vegetables
Sauté in 6 T. oil:
1/2 c. green pepper - cut in 1" squares
1/2 c. carrots; cut diagonally sliced
1/2 c. bamboo shoots (optional)
1/2 c. pineapple chhunks
1/2 c. onion, cut in small pieces
1/2 t. salt

Add sauce to mix and add meat. Serve over rice.
You never know what you can do until you have to do it.
