Hi all,
I'm just curious. How many of you don't eat very many vegetables since MC diagnosis?

I eat veggies as much as I can
Cooked - yes
Raw - don't handle them well at all
Lettuce = do not digest at all - cramps, gas, D
Best - Green beans

I eat potatoes almost every day. Other than that, maybe once every 2 or 3 months, I might eat a few green beans, or squash, but that's about the extent of it for me.

I probably eat more veggies now than I did before MC. Cooked. I love steamed Asparagus and Broccoli the best. BUT, I eat it with a dill sauce made from sour cream. I could probably eat the dill sauce all by itself.

I actually eat quite a lot of vegetables but like other members they need to be cooked, at least a little, depending on the vegetable.
I quite often make home made soup with carrots, celery, zucchini, onions, garlic, ginger and root vegetables included in the ingredients but they either simmer on the stove for most of the day or I cook the soup in a pressure cooker. In other words they are well cooked.
With a glowing recommendation in a post by Polly I found that roasted root vegetables have become one of my favorites. Carrots, parsnips, rutabaga and sweet potato roasted in the oven with a few cloves of garlic and then all mashed together is one of my favorites.
Winter squash is such a favorite that I probably risk overdoing it at times. Butternut squash is the one I prefer the most
A lot of the members seem to tolerate green beans and I include my self in the group. Depending on how small and how fresh determines how long I cook them. The large frozen ones Ineed to cooked longer. I usually steam them in a frying pan with a little bit of water and when they just get dry add a little bit of olive oil and some diced garlic and give them a quick stir fry.
Mashed peas were the first thing I tried and still eat them even unmashed. If I have been having even the most minor flare I still have to mash them up.
Broccoli was off the list for a long time but I have no problems with small amounts if cooked very well. Good with garlic too.
Lettuce seems to be a problem but have found that by throwing anything but iceberg lettuce into a stir fry at the very last moment and just letting it wilt I can tolerate it quite well. I always love raw spinach but it gives me major problems. this year I grew som in the garden and enjoyed the really little baby leaves steamed untill they wilt but did not try them when they got much bigger. My neighbors did though.
I have a problem with all of the niteshades, ( tomatoes, potatoes and egg plant being the main ones) so pretty much stay away from them.
I have to consider what kind of vegetables I will eat by the state of my well being on any given day but with care can eat quite a few

No problems here with veggies, even lettuce of any kind. Only raw veggies I eat are salads (with tomatoes). Usually, veggies are sauteed in olive oil or else blanched, then heat turned down and cooked as much as desired and seasoned and oiled as desired.
Not sure I ever had a problem with lettuce prior to going solid on gf, etc., but then the liquid, multiple stools were always so weird looking that I'm not sure I would've noticed lettuce doing anything different.

I eat cooked or raw veggies but do avoid broccoli and cauliflower - they give me gas

I eat mostly cooked veggies with meals - peas, green beans, carrots, potato (starch), brocolli, cauliflower.
I eat raw veggies in salads, but I'm trying to do that less frequently as the dressing probably bothers me. I'm really not sure if raw lettuce bothers me, but I'd imagine that if it did, I would know about it, because due to my vast intolerances, salads have become a very important part of my diet..

I love veggies!
I eat mostly vegetables, along with some tuna and chicken. I like : green beans, potatoes, brussel sprouts, broccoli, lettuce, carrots, corn, radishes, etc. And, I also like purple hull peas, black eye peas, etc.
The only ones that really bother me (gas) are :raw broccoli & cooked brussel sprouts, oh, and pinto beans.
I would hate it if I couldn't eat veggies

My mom said eat your veggies so I do... ;) LOL
Anyway I eat veggies though I limit them to the ones I like and I don't eat as much of them when I'm not feeling well. I usaully eat the following veggies on a weekly or so basis:
Spinach
Peas
Arsparagus
Romaine (raw with other salad type veggies)
Spaghetti squash and other squashes (though not very often)
Peppers
Mushrooms
Onions
Brocolli (used to eat it a lot, now not so much)
Corn (it's been a long time, but I used to love this, might try again when I'm stable to see if it's a problem)
Cauliflower (same as the broc)
Potatoes, sweet potatoes, avacado (not really a veggie are they?)
