This list is current as of May 2008, but please, 'always check labels" and if there is ever a question, don’t use the product. There are many, many more options out there, of course. These are just some ideas.

Simple "Recipes"
1.Chicken Nuggets: Cut boneless skinless breasts into nugget size; crush gf cornflakes in food processor and then mix with salt and pepper, to taste; coat chicken in gf mayo (I use Hellman's); roll chicken in cornflakes; bake (on non-stick sprayed foil) at 400 until done (turn them once). For my husband, I put cayenne pepper, garlic powder, and a Cajun seasoning in the coating…kids just get a dash of salt and pepper!
2. Little pigs in a blanket: Take Chebe mix and follow directions on the package.
Make 10-12 balls after you get it all mixed up. Then roll each ball out flat. Take a GF hot dog, cut it in half and roll up in the flattened out ball. Bake 375 for 25 minutes.
3. Corn dogs made in muffin cups. See my recipe for sweet cornbread. Make that up and then cut up GF hot dogs and mix in the cornbread batter. Put paper liners in muffin cups and fill 2/3 full with the mixture.
Bake at 375 for 18-20 minutes.

I'll add my 2 cents to this great list!
Van's waffles are as good as Eggo IMO. And they have gf apple cinnamon, and blueberry as well as plain. Plain are also great as a bread with peanut butter on them...probably better tasting than some breads.
The EnviroKids cereals I've tried are great (Koala Krips and Panda Puffs (peanutbutter). The Koala Krisps make great rice krispie treats. I just haven't tried the other varieties.

Dee - thank you so much....this is a wonderful list! I appreciate the time you but into it. Camryn LOVES the peanut butter puffs. Trader Joes also makes gf/df frozen pankcakes that she really likes. Trader Joes will give you a list of all the gluten free items they have in the store....Whole Foods does the same. This list from Dee is great b/c I can take it to my local grocery store as well. Trader Joes and Whole Foods are about 30 minutes away from me and I can't always get there.

This list is exceptional! I've been using many of these products already, but gathering them all together like this is wonderful.
One of my favorites is the Ian's products! Ian's makes products that are not GF, so be sure to read the label. Those that are, though, are really allergy/intolerance friendly and kid friendly. They contain no wheat, no gluten, no casein, no milk, no eggs, no nuts, no soy! Wow - sometimes it makes me wonder what I'm eating! But, if I turn the box over, I find nothing but healthy stuff and things I actually can pronounce and recognize! I do not eat red meat, but I love fish and I avoid poultry except that which is raised without antibiotics, growth hormones, etc. Ian's chicken nuggets fit that category, and the fish sticks and fish patties are great! I've even seen GF (and many other allergy-free things listed) TV dinners for kids. I actually bought one once just to see how it was - I got chicken nuggets, I believe it was french fries and, of all things, a GF brownie (which was raw dough and baked as I microwaved my dinner)! It was great! I think this company deserves kudos for helping out the nation's kids with allergies/intolerances!
