Hot German Potato Salad

Hot German Potato Salad - 4 generous servings

4 medium potatoes
6 slices bacon
2/3 c. chopped onion
2 T. potato flour
4-6 tsp. sugar
1 1/2 tsp. salt
1/2 tsp. celery seeds
dash of pepper
2/3 cup water
6 Tbsp. vinegar
2-3 Tbsp. pickle relish

Boil potatoes in skins. Peel and slice thinly or cube. Fry bacon slowly in skillet; drain on absorbent paper; crumble. Sauté onion in bacon fat until golden brown. Blend in potato flour & seasonings. Cook over low heat, stirring until smooth and bubbly. Remove from heat. Stir in water and vinegar. Bring to boil, stirring constantly. Boil 1 minute. Stir potatoes, pickle relish and crumbled bits of bacon in carefully. Remove from heat and let stand until ready to serve.
