Apple Cakes

Apple Cakes

In one bowl:
3 eggs
1 cup oil
2 cups sugar
2 t vanilla
Beat: eggs, oil, sugar, vanilla, until thick & smooth.
In another bowl mix together:
3 cups gf flour mix
2 t baking soda
1 t salt
1/4 t baking powder
2 t cinnamon
Add the egg, oil, sugar vanilla mixture to the flour mixture and blend well.
Batter will be stiff.
Then stir in:
4 cups diced apples
1 cup chopped walnuts (optional)
Grease 3- 8" cake pans & divide mixture between the cake pans.
Smooth out all around the cake pans.
It will look like the apples over power the batter but while baking, it will all blend together.
These will freeze well in ziploc freezer bags after they have cooled.
Bake at 350 degrees for 40-45 minutes.
