Pumpkin and cornmeal muffins

Pumpkin and cornmeal muffins

4 oz fruit, pumpkin or sweet potatoes (pureed)
1 egg
1/3 c dry milk (or non-dairy powdered milk substitute, like Vance's dari-free)
Wonder how a GF flavored coffee creamer would taste? (coffee creamers are not DF)
1/4 tsp GF baking powder
1/4 tsp baking soda
1/4 c corn meal
1 Tbsp water
1/2 tsp GF vanilla
1/4 tsp vinegar
8 tsp honey

Mix together above and bake in muffin tins for 20-25 min at 350.

My friends on "normal" diets love these! I've never tried a non-dairy substitute, so just experiment until the right one is found.

Hi again;

I forgot to mention that these lend themselves very well to any form of dried fruit, even the common raisin, and/or nuts! But, if you enjoy baking, I'm sure you would have figured that out.
