Pumpkin Bundt Cake

Pumpkin Bundt Cake

1-1/2 c GF flour blend
1-1/2 tsp xanthan gum
2-1/2 tsp pumpkin pie spice
1-1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 c coconut oil or DF butter
1 c brown sugar
1 cup solid packed pumpkin
1/4 c applesauce
1 large egg
1 egg white
1/2 cup DF buttermilk ( add a tsp of lemon juice to DF milk to make the buttermilk)
1 Tbl vanilla

In a large bowl beat the coconut oil or DF butter, brown sugar, pumpkin, egg & egg white & applesauce.
Then slowly blend in the GF flour blend, pumpkin pie spice, baking powder, baking soda, xanthan gum & salt.
Add the DF buttermilk & vanilla.
Blend batter well.
Pour into a 6 c bundt pan that has been greased.
Bake at 350 for 30-40 minutes or until an inverted toothpick come out clean.
After the cake has cooled completely invert on to a serving plate and make a glaze with confectioners sugar, vanilla and about 3 tsp of orange juice and just drizzle that all over the top of the cake.
Or if you want to get really creative, frost the cake putting orange food coloring into your frosting and take a GF empty ice cream "cone" and frost it green and place it in the middle of your bundt cake where the hole is (stem side up of the cone). It will look just like a pumpkin!!! :chef2:
