Hi There Joan!!!
My suggestion, if you aren't peanut intolerant is use a nut butter instead of butter
Rice cereal
Marshmallows
Nut butter.
I believe the amount of butter isn't that much, so you could use coconut butter too.
After mixing it all together put them in a greased pan. Press out evenly. Put the pan into the refrigerator for about an hour. Take out and cut.
Try it, you may be surprised.
I remember when I worked at the elementary school, I'd make 6- 18x36 inch sheet pans of these and cut them into 80 pieces each....

I'll try it. I haven't had peanut butter for months and months. I guess I'll need to do a little test first.

I only had one cup of GF rice cereal so I added 3 marshmallows and a bit of peanut butter. Best treat I've had since June. THANKS.

Now I'll gain all the weight I've lost, though.

I'm so happy.

Joan,
Have I mentioned that I've substituted sunflower butter for peanut butter? I can't taste much difference, if any. The price is a little higher - about $6 for a 1 lb. jar, but I don't use it very often. I put it on a rice cake with jelly. I've also put it on rice crackers. You can purchase it at Whole Foods.

Thanks, Gloria. I seem to be fine with the peanut butter, at least for now. lol I had seen an ad for Sunbutter, maybe on one of the Celiac sites.

When DH returns from London, we must make the trip to B'ham to go to Whole Foods especially now that I have my GF, CF, SF book to help.
