I read the GI reported in the recent thread - interesting but a bit over my head in places. Can you give me a link that puts MC in layman terms so I can explain it to others? That would be helpful. I've been asked what it is and how is it different that Celiac's. Thanks!

To be honest, I'm not aware of any discussion that comes even close to the value of the one you mentioned. I just did another search, and I wasn't able to find any other potential leads. Dr. Lewey, (The Food Doc), has a few blog articles that touch on some of these issues, but while simpler, they still go into a bit of detail, and they don't cover the MC side of it very well. You might try these, to see if they are of any help:
