40th Anniversary Today
DH and I went out to eat at an authentic Greek restaurant for our 40th anniversary last night. I figure Greeks cook with olive oil instead of soybean oil. After checking with the waitress about soy and legumes, I ordered lamb with rice and a tomato sauce. We shared a lettuce salad w/olives and feta cheese. I ate a cube of the feta cheese, but not the cucumbers. I told the waitress I was splurging because it was my 40th anniversary.
At the end of our dinner, she delivered a scrumptious dessert - a slice of custard pie wrapped between phillo layers. I didn't have the heart to tell her that I couldn't eat it. DH shouldn't have eaten it either, because of his diabetes, but he did. I picked at it with my fork to make it look like I had some, but I didn't eat any of it. Oh, the willpower this disease requires!
That was our celebration. We've been debating for months what we should do. My DDs wanted to plan a surprise celebration, but they kept waiting to see if we were going to be home. I almost bought airplane tickets to NY City for the weekend because they were only $150 each, but DH wants to save our money for a Carribbean cruise in the winter. I hope I can eat more by then and that the economy has picked up so we don't have to worry about spending the money.

You never know what you can do until you have to do it.

Gloria,
Happy Anniversary!

Happy Anniversary!
Now that's a mouthful, if there ever was one. You passed the test with flying colors, though, especially considering that it was your anniversary. Good for you.Gloria wrote:Oh, the willpower this disease requires!

It is suspected that some of the hardest material known to science can be found in the skulls of GI specialists who insist that diet has nothing to do with the treatment of microscopic colitis.
