Pickled Eggs & Beets

Pickled Eggs & Beets

1 dozen eggs- hard boiled/ cooled/ then peeled
2 can sliced beets/Put the juice from the beets in a saucepan
1 c sugar
1 c apple cider vinegar
1 tsp whole cloves
With the beet juice in the saucepan add:
sugar
vinegar
cloves
Bring this to a boil and then turn down to a simmer
Simmer 3 minutes.
In a plastic container with a lid, put in the hard boiled eggs, the sliced beets and then with a small strainer, to catch the cloves, pour the boiled mixture over the eggs & beets. Place in the refrigerator.
You want to make these ahead because they need to be refrigerated and occasionally tossed and turned with the lid on for at least 3 days.
